Made this cheddar and bacon chicken the other night... loved by all.
  • 1 egg
  • onion salt to taste
  • pepper
  • 1/2 cup plain panko bread crumbs
  • 1/2 cup finely shredded cheddar jack cheese (add more to taste)
  • 3 oz cooked real bacon peices- (I cooked 6 real bacon strips and chopped)
  • 1 package 14 oz uncooked chicken tenders (not breaded) ** You can increase for a bigger crowd, just make sure to increase other ingredients)

  • Heat oven to 400°F
  • Spray roasting grill pan with cooking spray (for easy clean up line with foil and spray)
  • Season each chicken tender with garlic salt, onion salt, and pepper
  • In small bowl, beat egg
  • In large bowl, place bread crumbs, cheese and additional garlic salt, onion salt, and pepper and dip chicken into egg
  • Place & press each chicken tender in the bread crumb mixture and coat the entire tender
  • Place chicken tenders on sprayed roasting grill pan, sprinkle on Bacon and more cheese to taste
  • Bake 15 to 20 minutes, until chicken is no longer pink in center and topping is toasted

My boys loved this and have asked for it a few times since I first made it. It was enjoyed by all and reheated well in toaster oven and in microwave.
