Maple Glazed Pork Tenderloin

Maple Syrup Glazed Pork Tenderloin
Pre Heat Oven to 450
place a few table spoons of Oil in bottom of shallow pan
Place tenderloin in pan
season to taste with
Pepper
Salt
Rosemary
Garlic

cover with Sliced Ham (I used thin cut lunchmeat)
over lap the pieces
Cover Pan with Foil (tightly to keep moisture in)
Cook for about 45 minutes
Take out of over and slice to see if cooked through

Pour about 1/2 cup of Maple Syrup (real or fake) over the wrapped pork
Do not recover
Place in over for additional 10 minutes
Remove from over to set before slicing the Pork



Homemade mashed potatoes with Skin on
Cut up about 6-8 med sized potatoes into 4ths
leave skin of if you prefer
Place in large sauce pan
put enough water in pan to cover the top of the potatoes
Boil with cover on till tender

pour off excess water
add 1/2 to 1 cup of milk (I use 1/2&1/2)
add four tablespoons (1/2 stick of butter)
salt and pepper to taste
MASH THE Stuffing out of the potatoes to thickness you like!

I served this meal with buttered corn, rolls and homemade applesauce
