join the yeast and flour -
oil will be used soon
1. Line a baking sheet with parchment paper

2. Pour yeast into bowl of stand mixer; whisk the 1/2 cup flour (of the 3.5 cups) and warm water until smooth.

3. Let sit 15 minutes until foamy. This tells us yeast is good & active.

4. Whisk 1 egg, melted butter, sugar, and salt into yeast mixture then add remaining flour (3 cups).

5. Use the dough hook on stand mixer to knead the dough on low until dough is sticky &  soft, 6 minutes.  if needed scrape sides with silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.

6. Remove dough from bowl onto a floured surface; dough will be sticky or stretchy, but will not stick to fingers. Now gently form the dough into a round shape, tucking loose ends underneath.

7. Clean out mixer bowl, drizzle olive oil into bowl, and roll dough over in bowl a few times to coat it lightly  with the oil. Cover bowl with plastic or foil. Let dough rise in warm place  until doubled, about 2 hours.

8. Now transfer dough to floured surface and pat to flatten the bubbles and then form into a rounded rectangle of dough about 6x8 inches and 1/2 inch thick.  Lightly dust dough with flour as needed. Next cut the dough into 8 equal pieces.  Using your hands gently form each piece into a round shape, gently tucking ends under.

9. Gently use hands to pat and stretch dough rounds into flat round shapes about 1/2 inch thick. Arrange dough about 1/2 inch apart on the prepared baking sheet. Lightly dust with flour and then place piece of plastic wrap over baking sheet -do not seal. Let rolls rise 1 hour until doubled.

10. Preheat oven to 375 degrees F
After rolls have risen for additional hour
and put in the oven to be baked

11. Using fork in small bowl, beat 1 egg and milk in a small bowl until thoroughly combined. Then gently brush tops of rolls with the egg wash without pushing on the deflating the dough.

If desired sprinkle each bun with sesame seeds or poppy seeds.

12. Bake in the preheated oven until lightly browned on top,
about 15 to 17 minutes.

Let cool completely on a cooling rack, tear the rolls apart if they touched while baking.

Cut just before eating for freshness.

Store in a plastic zip top bag to keep fresh.
