Maple-Soy Glazed Salmon

Great quick and easy dinner

Ingredients
(makes four servings)
1-3/4 pounds boneless salmon fillet
3/4 teaspoon coarse salt
1/4 teaspoon black pepper
2 tablespoons and 2 teaspoons maple syrup
1 tablespoon and 1 teaspoon soy sauce
1 tablespoon and 1 teaspoon melted butter
1 tablespoon and 1 teaspoon fresh lime juice
1/4 teaspoon lime zest
1 tablespoon and 1 teaspoon chopped fresh chives
4 lemon wedges

2.Preheat an outdoor grill for medium-high heat and lightly oiled pan.

(I cooked in oven on broil)

3.Season the salmon fillet with salt and pepper, and place onto non-stick sprayed broiling pan.

4. whisk together the maple syrup, soy sauce, butter, lime juice, and lime zest. Baste the salmon with the glaze, and continue cooking until the salmon flakes easily with a fork, about 10 minutes total. Serve the salmon garnished with chopped fresh chives and lemon wedges.

We served this with oriental style vermicelli/rice mix (which I started to cook 15 minutes before preping the fish)
